Name: Zero flour plantain crepes

Origin: Nigeria

Ingredients It Favours:

  • 2 ripe plantains
  • 4 eggs
  • A splash of water
  • Pinch of salt
  • Optional add-ins: Chopped bell peppers
  • Grated carrots
  • Diced tomatoes
  • Parsley flakes or fresh herbs

Steps:

  1. Blend it up: Peel and chop your ripe plantains into small chunks
  2. Add them to a blender with 4 eggs and just a little water — enough to help the mixture blend smoothly
  3. Blend until velvety and lump-free
  4. Flavor it: Pour the blended mixture into a mixing bowl
  5. Add your chopped veggies, grated carrots, a pinch of salt, parsley flakes, or any herbs and flavor boosters of your choice
  6. Stir well to combine
  7. Cook it: Lightly spray or brush a non-stick pan with vegetable oil and place it on medium heat
  8. Pour in a thin layer of the mixture, spreading it like you would a regular crepe
  9. Flip and finish: Allow it to cook undisturbed until the underside is golden brown
  10. Carefully flip and cook the other side
  11. Repeat until your batter is done
