Name: Fiesta (Potato Fiesta)

Origin: Nigeria

Ingredients It Favours:

  • Irish potatoes
  • Eggs
  • Shredded chicken breast
  • Mackerel fish
  • Carrot
  • Red bell pepper
  • Green bell pepper
  • Scotch bonnet pepper
  • Onion
  • Curry powder
  • Thyme
  • Seasoning powder
  • Salt
  • Tomatoes
  • All-purpose flour
  • Butter or vegetable oil

Steps:

  1. De-bone and flake the mackerel fish and season lightly with salt, curry, thyme, and onion
  2. Shred the cooked chicken breast and set aside
  3. Parboil and dice the Irish potatoes and keep ready
  4. Crack eggs into a clean bowl and whisk lightly without over-whisking
  5. Add minced onion and Scotch bonnet pepper to the eggs and mix
  6. Add all-purpose flour and stir thoroughly to avoid lumps
  7. Add diced vegetables and mix well
  8. Add seasoning powder, curry, thyme, and salt and combine properly
  9. Add shredded chicken and flaked fish and mix evenly
  10. Add diced parboiled potatoes and melted butter and fold gently to combine
  11. Grease and flour a baking pan to prevent sticking
  12. Pour the mixture into the prepared pan and level evenly
  13. Bake in a preheated oven at 180 degrees Celsius for about 30 minutes
  14. Remove when golden brown and firm
  15. Allow to cool slightly, slice into desired shapes, and serve
